Salmon on a bed of roasted tomatoes

Salmon on a bed of roasted tomatoes 

Required: 
Salmon fillet - 500 g, 
tomatoes - 600 g 
olive oil - 75 g 

For the marinade: 
sherry - 50 g, 
Honey - 2 tbsp. spoons 
Garlic - 1 clove, 
lime or lemon (juice and peel) - 1 pc., 
soy sauce - 3 tbsp. spoon 


Preparation: 
For marinade, combine sherry, honey, garlic, zest, lime juice, soy sauce and pour over salmon fillets. Cover with foil and leave in refrigerator overnight. 
Preheat oven to 200 (C. Tomatoes cut up, put in the oven, sprinkle with olive oil and bake for 20-25 minutes, remove, then peel. Salmon cut into 4 steaks and fry in a pan with olive oil for 2 minutes. INVERTED and fry 2 more minutes. Salt and pepper to taste. 
To spread tomatoes on plates, top to put a salmon fillet, pour the marinade. Serve with boiled rice.
