Curry cod and tomato
Required:
0,5 kg of cod fillet
8 tomatoes,
1 white onion,
4 cloves garlic
1 tbsp. l. minced fresh ginger root,
2 teasp. coriander seeds,
1 tsp. chili powder,
2 teasp. ground cumin (cumin),
2 teasp. turmeric,
2 tbsp. l. tomato paste,
100 ml of fish broth,
salt to taste
1 tbsp. l. vegetable oil
coriander for decoration.
Preparation:
Oil is heated in a deep frying pan and poured thinly sliced onions, ginger and crushed garlic. Fry 2-3 minutes. over medium heat until soft. Enlarge the fire, add all the spices and stir fry 1 more minute.
Pour broth or water, add the diced tomatoes and tomato paste. Not setting the lid, simmer 5 minutes. Sauce if desired you can grind in a blender and puree until the state back into the pan.
Cod cut into large cubes, put into boiling sauce and keep it until cooked fish, 4-5 minutes. Sprinkle with chopped coriander leaves. Serve with hot rice.
