Dried cod Genovese


Ingredients:
600 grams of dried cod
 500 g tomatoes
 1 stalk celery petioles
 1 carrot
 300 g potatoes
 1 small bunch parsley
 1 small bunch basil
 3 tbsp.  l.  pine nuts
 1 onion
 2 cloves garlic
 5, Art.  l.  olive oil
 1 liter of vegetable broth (you can of cubes)
 salt and black pepper to taste
Preparation:
Cod soaked in cold water 24 hours, water changed 1-2 times.  Then rinse the fish, remove skin, remove bones, cut into pieces.
Pour the tomatoes for 1 minute.  boiling water, peel off the skin, cut crosswise, remove seeds.  The flesh of tomatoes into cubes.  Celery, carrots, onion and garlic finely chopped. In a skillet heat the olive oil, fry the chopped vegetables.  Add the cod and fry.  Add the tomatoes, pour in broth, pepper and salt if necessary (carefully!).  Cover and simmer over low heat for 1 hour. Peel the potatoes, cut into cubes the size of 1 cm after 1:00 extinction of fish put potatoes in saucepan, simmer another 30 minutes.  The finished dish sprinkle with pine nuts and garnish with basil leaves and parsley.
